Alongside producers and chefs, Assaggi 2026 hosts a lineup of associations, institutions and organisations that bring the Special Projects to life: spaces for in-depth exploration, training, outreach and exchange that tell the story of Lazio’s territory through different languages. Stands are active throughout the three days of the fair, with activities open to the public and industry professionals alike.
ALPA Lazio
The Lazio Beekeepers’ Association brings to Assaggi the monofloral and polyfloral honeys of the region, with a guided tasting led by sensory analysis experts registered with the national CREA-AA panel in Bologna. An opportunity to learn to identify the characteristics of each variety, discover hive products and get to know the work of Lazio’s beekeeping enterprises — 298 members and over fifteen thousand hives explored through a sensory lens, with hands-on exercises and tasting sessions.

CNA Viterbo e Civitavecchia
CNA Viterbo e Civitavecchia presents at Assaggi the Foodie format, an awareness-raising project against food waste and in favour of mindful consumption. The stand will serve as a space for dialogue between the Association, local artisan enterprises and the public: a place to reflect on the role businesses play in adopting good practices for reuse and by-product valorisation, and on the value of an approach to food that combines quality, sustainability and responsibility.

Confcommercio Lazio Nord
Confcommercio Lazio Nord sets up an operational desk at Assaggi for the three days of the fair, in partnership with FIPE — the Italian Federation of Hospitality Businesses, Confguide Lazio Nord and the Young Entrepreneurs Group. A reference point for visitors and tourists, offering guidance on the area’s commercial establishments and hospitality venues, integrated food-and-wine itineraries, and the chance to meet the young businesses innovating in commerce, tourism and Lazio’s food-and-wine sector.

Expo Tuscia DMO
The Destination Management Organization Expo Tuscia presents at Assaggi the Food and Wine Tour of Tuscia project, funded by the Lazio Region. Developed in partnership with the Strada dell’Olio, the Università Agraria di Monte Romano, the Wine Museum and numerous local bodies, the project promotes and markets the territory’s agri-food excellence through a food-and-wine guide — in print and digital formats — dedicated tourist packages and a promotional video featuring chefs and restaurateurs from the Viterbo area preparing traditional local recipes.

ITS Academy Agroalimentare
The ITS Academy Agroalimentare of Viterbo supports exhibiting companies with a strategic consultancy programme managed by students from the Agrifood Digital Marketing & Sales Manager, Agritourism Manager and Evologo courses. The stand serves both as an information point on the ITS training offer and as an exhibition area where students present projects, workshops and digital strategy tools applied to the food-and-wine sector — a bridge between education, enterprise and innovation that highlights the sector’s emerging skills.

Sons of Fantasy APS
Sons of Fantasy brings to Assaggi an original format that combines narrative role-playing and guided tasting. Dungeons and Dinner transforms the sampling of local products into chapters of a fantasy adventure set in Tuscia, where every dish and every glass become elements of a shared story. Demo mini-sessions open to the public on fair days, plus a dedicated workshop for industry professionals — restaurateurs, producers, tour guides — on how to build a replicable food-and-wine adventure in wineries, farmhouses and local businesses across the territory.
