Regenerative biologic agriculture is fundamental for the environment conservation and for small-scale, high-quality artisanal productions.
My name is Emanuele Moscini, owner of Eco Fattoria Il Sogno Verde where i put daily artisanal craftsmanship, passion, and love for nature. Our lands belong to been in my family since 1847.
I personally oversee every stage of olive production with meticulous attention to detail, exclusively in my six-hectare ancient olive grove in Canino, located in Viterbo area, just at the border with Tuscany.
The 388 monumental olive trees, approximately 400 years old and reaching over 10 meters in height, are interspersed with wide grassy spaces that preserve biodiversity and provide nourishment for bees.
We blend tradition with innovative agronomic practices, reusing processing byproducts to enhance soil fertility and health. This approach allows the land and trees to capture CO₂, helping combat climate change.
Our Caninese olives, small and mostly green at harvest, are cold-pressed the same day in a small-scale, artisanal mill that highlights the raw material’s qualities.
Safety and sustainability are priorities:
Our intense green oil boasts a bold, fruity, bitter, and spicy flavor, with aromatic notes of thistle, fresh grass, and artichoke.
