The IL MOLINO organic farm is located in a hilly position in the splendid scenery of the Tuscia Viterbese, between Montefiascone and Lake Bolsena.
The estate, which has been in our family for generations, covers an area of approximately 300 hectares and has always been managed with respect for the environment as demonstrated by the choice to cultivate using strictly organic criteria.
We produce Senatore Cappelli durum wheat, barley, spelled but it is the olive grove, with its ten thousand plants, many of which are centuries-old, of mainly canino and frantoio varieties that is the fulcrum of our activity and the organic extra virgin oil is the flagship of the company. production.
The olives harvested and pressed in the company's private oil mill (a two-phase continuous cold cycle system) within 3 or 4 hours guarantee a product rich in chlorophyll, polyphenols and tocopherols, which have an important antioxidant function for our body and represent a precious resource of vitamins.
The organoleptic and nutritional qualities are preserved by storing the oil in containers under nitrogen. We separate the different cultivars to obtain monocultivar oils: Frantoio and Caninese. The flagship of our production is the Denocciolato Caninese DOP Tuscia extra virgin olive oil, Presidio Olivi Secolari.
In our laboratory we obtain flavored oils obtained by pressing olives together with citrus fruits or by infusing herbs.
We grow high quality durum wheat, in fact we produce organic Senatore Cappelli durum wheat with which we produce pasta. This is obtained through artisanal processing, the wheat is ground in the stone mill then the pasta is bronze drawn. This type of pasta contains little gluten and is rich in proteins, fiber and vitamins.
On the farm there are two farmhouses with swimming pool for rent on a farm.
